Slow Cooker Chicken Chili

The great thing about this recipe is how easy it is, and you can totally get your kiddos help. Load up on fiber and some protein with a variety of beans. The chicken bone broth will give a boost of nutrition and collagen to help your joints, hair, and nails.

INGREDIENTS:

1 15 OUNCE CAN BLACK BEANS, DRAINED
1 15 OUNCE CAN GREAT NORTHERN BEANS, DRAINED
1 15 OUNCE CAN RED BEANS, DRAINED
2 4 OUNCE CANS GREEN CHILIS
4 SKINLESS, BONELESS CHICKEN BREASTS
3 TBSP HOMEMADE TACO SEASONING
2 CUPS CHICKEN BONE BROTH
HOMEMADE RIOUX – 2T BUTTER MELTED, MIXED WITH 3 T FLOUR, STIR IN 1/2 CUP CHICKEN BONE BROTH
8 OUNCES SOUR CREAM

DIRECTIONS:

STEP 1:

Combine everything in the slow cooker.

STEP 2:

To thicken, stir in 8 oz sour cream right before serving.

Gluten Free – when making rioux, use sweet rice flour instead of regular.
